The Past
I am a 5th generation farmer and 1st generation rancher, combining my experience with cattle and horses to fulfil my dream of building a cattle ranch deeply rooted in stewardship and sustainability. Raised between Ireland and Canada, I relocated to Scotland with my family in 2023 and I am now embarking on establishing an eco-positive, direct-to-consumer beef business. Through regenerative grazing practices and a deep respect for the land, I aim to produce high-quality beef while improving soil health, biodiversity, and the long-term future of agriculture. The Present
Now based on the outskirts of St. Andrews, I am the founder of Toll Ranch Cattle Co., based on a 100-acre stretch of rich lowland pasture that serves as the foundation for an ambitious and pioneering vision. At Toll Ranch Cattle Co., our 100 acres serve as a living research and development platform focused on regenerative cattle and pasture management. Through careful observation, record keeping, and hands-on management, I collect data on cattle performance, grazing patterns, forage recovery, soil health, and pasture productivity. By monitoring how livestock and land respond to different management practices, we aim to identify the most effective methods for producing healthy, efficient cattle while improving the long-term resilience and ecological function of the land.
The Future
My goal is to establish the UK’s first fully eco-positive, all-natural cattle ranch — one that integrates traditional knowledge with progressive land management practices. Central to my approach is the introduction of western horsemanship into British cattle systems. Drawing on the well-documented advantages of working cattle on horseback, I am aiming to improve animal welfare, land use efficiency, and operational harmony, while reintroducing a more intuitive and responsive method of livestock handling.
Looking ahead, my hope is to expand both land and livestock. My herd will serve not only as a productive enterprise but as a living model for regenerative and independant agriculture—demonstrating how properly managed cattle can play a vital role in restoring soil health, improving biodiversity, and revitalizing degraded rangelands across the UK. Built on the belief that healthy cattle, healthy soil, and healthy communities all work together. I am committed to producing high-quality, nutrient-dense beef for my local community and beyond, whilst giving back to the land through responsible grazing, improved soil health, increased biodiversity, and regenerative cattle management practices. My goal is to demonstrate that cattle absolutley do play a positive role in restoring the land whilst producing honest, natural food for future generations.
